Flourless Peanut Butter Chocolate Chip Cookies

This is one of those recipes I come back to again and again—partly because it’s so easy, and mostly because the cookies are that good. These Flourless Peanut Butter Chocolate Chip Cookies are rich, soft, chewy, and packed with peanut butter flavor, all without flour, butter, or a mixer.

All you need is one bowl, six ingredients, and about 15 minutes. Whether you’re baking for a gluten-free friend, making an after-school snack, or just craving something sweet and simple—you need this recipe in your back pocket.

Recipe Tips

Use Creamy Natural Peanut Butter: The kind with just peanuts and salt works best for a gooey, soft center. If your peanut butter is super drippy, you can chill the dough briefly to help it hold shape.

Don’t Skip the Baking Soda: It may seem like a small amount, but it’s what gives these cookies that light chew and slightly puffed center.

Flatten the Dough Slightly: These cookies don’t spread a ton on their own, so press them down just a bit before baking for that classic cookie shape.

Let Them Cool Before Moving: They’ll be soft right out of the oven but will firm up as they cool. Give them 5 minutes on the tray before transferring to a wire rack.

Ingredient Swaps: Coconut Sugar ? Use brown sugar or maple sugar for a similar rich sweetness. Egg ? Sub a flax egg (1 tbsp flax + 3 tbsp water, let sit 5 mins) for a plant-based option. Chocolate Chips ? Use chopped dark chocolate, dairy-free chips, or even peanut butter chips. Peanut Butter ? Try almond butter or cashew butter for a different nutty twist.

Room Temperature: Store in an airtight container for up to 4 days

Freezer: Freeze baked cookies for up to 2 months; thaw at room temp or warm in the microwave for 10 seconds for that fresh-from-the-oven feel
