With juicy roasted cherry tomatoes, creamy baked feta, and simple seasonings, this dish turns minimal ingredients into something incredibly flavorful. Once mixed together, the feta melts into the roasted tomatoes, creating a rich, tangy sauce that coats every bite of pasta perfectly.

Recipe Tips

Use High-Quality Feta for the Best Flavor: Not all feta is the same! A block of feta in brine (rather than pre-crumbled) melts better and creates a creamier, richer sauce.

Roast the Tomatoes Until Soft & Juicy: Baking the tomatoes covered helps them release their juices, creating a flavorful base for the sauce. If you like them extra caramelized, uncover for the last 5 minutes.

Mash the Feta & Tomatoes While Hot: Right after baking, stir everything together while it’s still hot. This helps the feta fully melt and blend into a smooth, creamy sauce.

Use Your Favorite Pasta Shape: Short pasta like rotini, penne, or fusilli works best, as it holds onto the sauce beautifully.

Ingredient Swaps: Feta Cheese ? Swap for goat cheese for a milder, tangier version. Cherry Tomatoes ? Use grape tomatoes or chopped Roma tomatoes. Olive Oil ? Try garlic-infused olive oil for extra flavor. Pasta ? Use gluten-free pasta or chickpea pasta for more protein.

Refrigerator: Store leftovers in an airtight container for up to 2 days.

Ingredients

  • 1 cup cherry tomatoes
  • 3 oz feta cheese
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1 tsp garlic powder
  • 1/2 cup protein pasta cooked, I used Brami

Instructions

  • Preheat oven to 400F and grease a cocotte (19oz) with oil
  • Add tomatoes, 1/2 tbsp oil, and 1/2 of seasonings and toss
  • Top with your feta cheese and the rest of oil and seasonings
  • Cover with lid and bake for 25 minutes
  • Mix together until creamy
  • Add your cooked pasta and stir to incorporate all flavors

Place in an airtight container and in the fridge for up to 4 days
