Ingredients
- 3 medium bananas mashed
- 2/3 cup maple syrup
- 1/3 cup coconut oil
- 2 pasture raised eggs
- 1 cup cottage cheese or Greek yogurt
- 1 tsp vanilla extract
- 2 cups gluten free all purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup white chocolate chips + some for topping/melting
- 1/2 cup pistachios chopped + some for topping
Instructions
- Preheat oven to 350F and line bread pan with parchment paper
- In a large bowl, add mashed bananas, maple syrup, and coconut oil, whisk to combine
- Add in eggs, cottage cheese and vanilla extract and mix well to combine
- In a separate bowl, pour in flour, baking soda, and salt and mix well; add to the wet ingredients
- Add in white chocolate chips and chopped pistachios and fold into the batter
- Pour your batter into the prepared pan and top with extra white chocolate chips and chopped pistachios
- Bake for 60-70 minutes or until a toothpick comes out clean
- Allow to cool for 10 minutes
- Melt your white chocolate with coconut oil in the microwave and stir
- Drizzle over the banana bread and top with additional pistachios
- Cut into slices and plate
