Ingredients

  • 3 medium bananas mashed
  • 2/3 cup maple syrup
  • 1/3 cup coconut oil
  • 2 pasture raised eggs
  • 1 cup cottage cheese or Greek yogurt
  • 1 tsp vanilla extract
  • 2 cups gluten free all purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 cup white chocolate chips + some for topping/melting
  • 1/2 cup pistachios chopped + some for topping

Instructions

  • Preheat oven to 350F and line bread pan with parchment paper
  • In a large bowl, add mashed bananas, maple syrup, and coconut oil, whisk to combine
  • Add in eggs, cottage cheese and vanilla extract and mix well to combine
  • In a separate bowl, pour in flour, baking soda, and salt and mix well; add to the wet ingredients
  • Add in white chocolate chips and chopped pistachios and fold into the batter
  • Pour your batter into the prepared pan and top with extra white chocolate chips and chopped pistachios
  • Bake for 60-70 minutes or until a toothpick comes out clean
  • Allow to cool for 10 minutes
  • Melt your white chocolate with coconut oil in the microwave and stir
  • Drizzle over the banana bread and top with additional pistachios
  • Cut into slices and plate
