Game-Day Buffalo Chicken Bites

If you’ve ever been to a party or game day get-together where I brought these… I’m sorry if you only got one. They go fast. These Buffalo Chicken Bites are spicy, cheesy, crunchy, and very addicting—and thanks to Firehook Crackers as the base, they’re way easier to assemble than traditional sliders or wraps.

You just toss together some shredded chicken with buttery buffalo sauce, scoop it onto crackers, sprinkle with cheese, and bake for a few minutes. Finish with fresh toppings and a drizzle of ranch or more buffalo sauce (do both). It’s got that crispy, melty, saucy combo that never misses.

Recipe Tips

Use rotisserie chicken: It makes this recipe even faster and shreds beautifully.

Go light on the chicken per cracker: Too much and they’ll get soggy. Just enough for one solid bite.

Add the drizzle at the end: It keeps the crackers crisp and gives that fresh punch of flavor.

Don’t skip the celery + green onions: They add the perfect crunch and brightness to balance the heat.

Ingredient Swaps: No blue cheese ? Use ranch dressing or crumbled feta instead. Dairy-free ? Use dairy-free cheddar shreds and skip the blue cheese or swap with DF ranch. Extra heat ? Add hot sauce or cayenne to the chicken mixture. Want more crunch ? Add chopped pickles or jalapeños on top before serving. Need it vegetarian ? Swap chicken for shredded jackfruit or chopped cauliflower florets tossed in the same buffalo sauce mix.

Best fresh: These are at their peak right out of the oven.

Want to prep ahead?: Mix the chicken and toppings in advance and store separately. Assemble and bake just before serving.

Reheat: If needed, pop leftovers in a 350°F oven for 5 minutes to crisp everything back up.

Ingredients

For the Buffalo Chicken:

  • 2 cups cooked shredded chicken
  • ½ cup buffalo sauce
  • 2 tbsp melted butter
  • ½ tsp garlic powder

For the Toppings:

  • ½ cup crumbled blue cheese or ranch
  • ½ cup shredded cheddar cheese
  • ½ cup chopped celery and green onions

Base:

  • 1 box Firehook Crackers Sea Salt or Everything Flavor

For the Garnish:

  • Drizzle of ranch or extra buffalo sauce I did both
  • Fresh cilantro or parsley

Instructions

  • Preheat oven to 375°F (190°C)
  • Line a baking sheet with parchment paper and spread Firehook Crackers out in a single layer
  • In a bowl, mix shredded chicken, melted butter, garlic powder, and buffalo sauce until coated
  • Scoop a small spoonful of buffalo chicken onto each Firehook Cracker
  • Sprinkle with shredded cheddar cheese and crumbled blue cheese
  • Bake for 5-7 minutes, or until the cheese is melted and bubbly
  • Remove from the oven and top with chopped celery and green onions
  • Drizzle with ranch or extra buffalo sauce for extra flavor
