A quick note on the name: traditional shepherd’s pie is technically made with lamb, while a beef version is called cottage pie. I’m using ground beef here because it’s what most of us actually have on hand, but feel free to swap in ground lamb if you want the true original.

  • Peas: Adds a pop of color and sweetness; frozen or canned both work fine. Want more veggies? Add mushrooms, zucchini, green beans, or spinach, too!
  • Tomato Paste and Beef Broth: These build the rich, savory sauce that holds the filling together once it simmers.

How to Make Sweet Potato Shepherd’s Pie

This recipe for sweet potato shepherd’s pie comes together just like a classic shepherd’s pie. Here’s an overview of the process:

Step 1: Boil and mash the sweet potatoes. This process is the same as making mashed sweet potatoes. Boil the cubed sweet potatoes until fork-tender. Then, drain them right away, and use a potato masher to combine them with milk, butter, salt, and pepper. Set aside.

Step 2: Brown the beef. In a large skillet, cook the ground beef over medium heat until browned, breaking it apart as it cooks, then drain any excess fat.

Step 3: Build the filling. Add the onion and garlic and cook until softened, then stir in the carrots. Add the tomato paste, beef broth, thyme, rosemary, and Worcestershire sauce, and let everything simmer so the sauce thickens. Stir in the peas at the end.

Step 4: Assemble. Spread the meat mixture in an even layer in a baking dish or casserole dish, then top with the mashed sweet potatoes, spreading all the way to the edges to seal in the filling. Use the back of a spoon to swirl the top into little peaks.

Step 5: Bake. Bake until the topping is set and lightly golden, then broil just until the top is lightly crisp and darkened in color. Be careful not to burn! Serve warm.

Tips for the Best Sweet Potato Shepherd’s Pie

Assemble ahead. Both the filling and the mashed topping can be made a day ahead and stored separately in the fridge. When you’re ready, just assemble and bake. This is a great one to prep on a Sunday for a busy weeknight!

Boil sweet potatoes just until tender. Don’t overcook the potatoes or they’ll absorb too much water. Once they’re fork-tender (about 10-12 minutes), drain them right away for a creamier mash.

Let the filling simmer to thicken. After adding the broth and tomato paste, simmer for 5-7 minutes to allow the mixture to reduce and concentrate in flavor. This helps the final dish hold together beautifully when served.

Drain the potatoes thoroughly. Let them sit in the colander for a minute or return them to the warm pot briefly so excess moisture can evaporate.

Mash while warm. Sweet potatoes become easier to mash smoothly before they cool.

Avoid too much milk. Add it gradually so the topping remains thick enough to spread and hold its shape.

Use a spoon to “swirl” the topping. After spreading the mashed sweet potatoes, use the back of a spoon to create little peaks. This helps them get golden and slightly crisp when baked or broiled.

Broil for a golden top. For that perfect finishing touch, broil for 2-3 minutes at the end until the sweet potato topping gets lightly browned and toasty.

Add garlic to the mash. A clove of roasted or sautéed garlic mashed right into the sweet potatoes adds a savory depth that plays really well against their natural sweetness.

How to Store, Freeze, and Reheat

Reheating: Warm in the oven at 350°F for 15-20 minutes, or microwave individual portions for 1-2 minutes.

  • ½ cup beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tbsp Worcestershire sauce
  • Salt and pepper to taste

Instructions

Enable step-by-step mode
  • Place sweet potatoes in a large pot of salted water; bring to a boil and cook for 10-12 minutes or until tender
  • Drain the potatoes and mash with almond milk, butter, salt, and pepper; set aside
  • Heat a large skillet over medium heat and add the ground beef and cook until browned, breaking it apart with a spoon; drain excess fat
  • Add the diced onion and garlic, cooking until softened, about 3 minutes
  • Stir in the carrots and cook for 3-4 minutes
  • Add the tomato paste, beef broth, thyme, rosemary, and Worcestershire sauce and stir well to combine >>simmer for 5-7 minutes, allowing the sauce to thicken slightly
  • Stir in the peas and season with salt and pepper to taste
  • Preheat oven to 375°F
  • Spread the beef filling evenly in a baking dish
  • Top with the mashed sweet potatoes, spreading them out with a spoon to completely cover the filling
  • Place the dish in the oven and bake for 20-25 minutes, or until the sweet potato topping is slightly golden
  • For extra crispness, broil for an additional 2 to 3 minutes at the end
  • Let the Shepherd’s Pie cool for 5 minutes before serving
