Ingredients
- 1 lb ground turkey or ground beef
- 1 tbsp olive oil
- ½ small onion
- ¼ cup ketchup
- 1 tbsp mustard
- 1 tbsp pickle relish optional
- Garlic powder salt, pepper
- 1/3 cup blended cottage cheese
- 2 cups mashed potatoes or roasted sweet potato cubes
- ½ cup shredded cheddar or DF cheese
Instructions
- Heat olive oil in a skillet and sauté onion until soft. Add ground turkey and cook until browned.
- Stir in ketchup, mustard, relish (if using), and seasonings.
- Mix in blended cottage cheese or Greek yogurt until the mixture is creamy and well combined.
- Spread the roasted sweet potato cubes in the bottom of your baking dish.
- Spoon the sloppy joe turkey mixture evenly over the sweet potatoes.
- Top with shredded cheese.
- Bake uncovered for 15–20 minutes, until bubbly and golden. Cool slightly before serving. Garnish with chopped pickles or green onion if you’d like.
