Ingredients

For the Brownie Batter:

  • 14 oz package bobs red mill brownie mix

For the Cookie Dough:

  • 1/2 cup coconut oil
  • 1 cup coconut sugar
  • 2 eggs
  • 2 tsp vanilla extract
  • 1 3/4 cups gluten free ap flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 cup unreal M&Ms or regular M&Ms

Instructions

Enable step-by-step mode
  • Preheat your oven to 350F and line a baking sheet with parchment paper

For the Brownies:

  • Follow instructions from your bob’s red mill brownie package or your brownie package of choice
  • Set aside while you make your cookie dough

For the Cookies:

  • In a large mixing bowl, add your oil and coconut sugar and mix until a thick, clumpy texture forms
  • Add in your eggs, baking soda and powder, and vanilla extract and stir until well combined
  • Once combined, add in your flour and fold together until a few streaks of flour remain
  • Add in the m&ms and fold into the dough

For the Monster Brookie Assembly:

  • Using a 3 tbsp cookie scoop, scoop the cookie dough and brownie batter into your 9×9 pan making a “marble” pattern
  • Bake for 40-45 minutes or until a toothpick comes out clean
  • Remove from the oven and allow to cool for 10 minutes
  • Cut into 12 squares
  • Enjoy!
