Ingredients  

Waffles

  • 2 overripe bananas
  • 1/2 cup cottage cheese blended
  • 2 large eggs
  • 1 cup oat flour (or regular flour)
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • pinch of salt
  • cooking spray or melted butter

Toppings

  • 4 tbsp maple syrup
  • 1/4 cup dark chocolate chips

Instructions 

  1. preheat your waffle iron and lightly grease it with cooking spray or melted butter
  2. in a bowl, mix mashed bananas, cottage cheese, eggs, vanilla extract, oat flour, baking powder, cinnamon, and salt until a thick batter forms
  3. pour about ½ cup of batter (or as recommended by your waffle iron instructions) into the waffle maker
  4. close and cook for 4-5 minutes or until crispy and golden brown.
  5. serve warm with extra banana slices, syrup, chocolate chips, or nut butter

Notes

Store in an airtight container for up to 3 days in the refrigerator; reheat in a toaster or oven to keep them crispy. Freeze in a single layer, then transfer to a zip-top bag for up to 2 months; reheat directly from frozen in the toaster
