Recipe Tips
Use Overripe Bananas: The secret to making these waffles sweet and flavorful lies in using overripe bananas. They’re not only sweeter, but they also add extra moisture to the batter, making the waffles tender. If you only have slightly ripe bananas, you can still use them, but they won’t be as sweet or flavorful.
Blend the Cottage Cheese: If you want super-smooth waffles, blend the cottage cheese before adding it to the batter. This step ensures there are no chunks in the batter, giving you that creamy texture without the curd-like consistency of unblended cheese, ideal for cottage cheese waffles.
Experiment with Flour: You can easily swap out oat flour for regular all-purpose flour if you don’t have oat flour on hand. If you’re using regular flour, the waffles may not be as dense and might turn out slightly lighter in texture, perfect for cottage cheese waffles. For a gluten-free version, oat flour works perfectly.
Add Ins: Feel free to get creative with add-ins. Chopped nuts, like walnuts or pecans, would add a nice crunch. Or toss in some fresh berries (like blueberries or raspberries) for an extra burst of flavor. You can even stir in a handful of mini chocolate chips directly into the batter if you love chocolate. Infusing cottage cheese into waffles complements these add-ins wonderfully.
Don’t Overmix: As with most waffle batters, avoid overmixing the ingredients. Overmixing can cause the waffles to become tough or dense. Mix just enough to combine the wet and dry ingredients—leaving a few small lumps is perfectly fine! This applies to all waffle recipes, including cottage cheese waffles.
Adjust Consistency: If your batter is too thick (it should be similar to pancake batter), you can thin it out by adding a splash of milk (dairy or non-dairy) to reach your desired consistency. On the other hand, if it’s too runny, add a little more oat flour to thicken it up.
Crispiness Tip: For extra crispy waffles, you can cook them a little longer, but be mindful not to burn them. If you’re worried about overcooking, set your waffle iron to a slightly lower setting and cook them a little longer until the exterior is perfectly crispy. Cooking cottage cheese waffles to the perfect crispness will enhance their overall texture.
