Ingredients
- 1 lb Brussels sprouts halved
- 6 slices turkey bacon chopped
- 1 cup plain Greek yogurt 2% or full-fat
- 1/2 cup cheddar cheese or parmesan, shredded
- 1 tbsp Dijon mustard
- 1 tsp garlic powder
- 1/2 tsp smoked paprika optional
- Salt & pepper to taste
Instructions
- Heat a large oven-safe skillet over medium heat and add chopped bacon and cook until crispy, about 5-7 minutes; remove and set aside
- In the same skillet, add Brussels sprouts cut side down and sauté for 5-7 minutes until golden brown and slightly tender
- Stir occasionally but let them get crispy on one side
- In small bowl, mix Greek yogurt, Dijon mustard, garlic powder, smoked paprika, salt, and pepper
- Add the cooked bacon back into the skillet with the Brussels sprouts
- Pour the Greek yogurt mixture over and gently toss to coat
- Sprinkle with shredded cheese.
- Place the skillet under the broiler for 2-3 minutes until the cheese is bubbly and golden brown
