Ingredients

  • 1 lb Brussels sprouts halved
  • 6 slices turkey bacon chopped
  • 1 cup plain Greek yogurt 2% or full-fat
  • 1/2 cup cheddar cheese or parmesan, shredded
  • 1 tbsp Dijon mustard
  • 1 tsp garlic powder
  • 1/2 tsp smoked paprika optional
  • Salt & pepper to taste

Instructions

  • Heat a large oven-safe skillet over medium heat and add chopped bacon and cook until crispy, about 5-7 minutes; remove and set aside
  • In the same skillet, add Brussels sprouts cut side down and sauté for 5-7 minutes until golden brown and slightly tender
  • Stir occasionally but let them get crispy on one side
  • In small bowl, mix Greek yogurt, Dijon mustard, garlic powder, smoked paprika, salt, and pepper
  • Add the cooked bacon back into the skillet with the Brussels sprouts
  • Pour the Greek yogurt mixture over and gently toss to coat
  • Sprinkle with shredded cheese.
  • Place the skillet under the broiler for 2-3 minutes until the cheese is bubbly and golden brown
  • Plate and enjoy!!

store in an airtight container in the fridge for 4 days; do not freeze!
