These are one of my go-to meal prep staples—especially when I want to feel like I have my life together (even just a little bit). And the fact that you can grab one straight from the freezer and have it hot in minutes? Elite.

I used my High Protein Everything Bagels for the base, and trust me, it makes a difference. Soft, a little chewy, packed with flavor. Then you layer in this creamy baked egg (blended with cottage cheese, of course), melty cheddar, Canadian bacon or sausage, and a drizzle of Mike’s Hot Honey. It’s that perfect combo of salty, sweet, and just a little spicy. These keep so well in the freezer, and they’re one of those breakfasts you’ll actually look forward to on busy mornings. Ingredients

  • 8 High Protein Everything Bagels sliced
  • 8 eggs pasture raised preferred
  • 1 cup cottage cheese
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 8 slices cheddar or American cheese
  • 8 slices canadian bacon
  • 2 tbsp Mikes Hot Honey

Instructions

  • Toast the bagels lightly
  • Preheat the oven to 350F and blend the eggs, cottage cheese, salt, pepper and garlic powder until smooth.
  • Pour into a 9×13 pan and bake for 15-18 minutes
  • Cut into circles (using a biscuit cutter) or squares
  • Assemble: Place the egg, cheese, and turkey bacon/sausage on each bagel.
  • Wrap individually in parchment paper and freeze
  • To reheat, microwave wrapped in a paper towel for 1-2 minutes or air fry at 350°F for 5 minutes
  • Top with Mike’s Hot Honey or regular honey
