Ingredients

  • 1 1/2 cups old-fashioned rolled oats
  • 1/2 cup oat flour or finely blended rolled oats
  • 2 tbsp ground flaxseed
  • 2 tbsp hemp hearts
  • 2 tbsp brewer's yeast
  • 1 scoop vanilla protein powder
  • 1/2 tsp fine sea salt
  • 1/2 cup creamy cashew butter or almond butter
  • 1/4 cup maple syrup
  • 2 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • 1/2 tsp butter extract optional, but gives that true cake batter flavor
  • 2-4 tbsp milk of choice as needed
  • 1/3 cup white chocolate chips
  • 2 tbsp naturally colored rainbow sprinkles plus more for rolling if desired

Instructions

Enable step-by-step mode
  • In a large bowl, combine the oats, oat flour, flaxseed, hemp hearts, brewer's yeast, protein powder, and salt.
  • Add the cashew butter (or nut butter of choice), maple syrup, melted coconut oil, vanilla, and butter extract. Mix until combined.
  • Add milk one tablespoon at a time until the mixture holds together when pressed between your fingers.
  • Fold in the white chocolate chips and sprinkles.
  • Scoop about 1 1/2 tablespoons of dough and roll into balls.
  • If desired, roll the outside in additional sprinkles.
  • Refrigerate for at least 30 minutes before serving.
