Ingredients

  • 1 cup cottage cheese blended until smooth
  • 1 cup all-purpose or almond flour
  • 2 tsp baking powder
  • ½ tsp cinnamon
  • ½ tsp salt
  • 2 tbsp maple syrup or honey, optional
  • ½ cup blueberries fresh or frozen, tossed in 1 tsp flour
  • 1 egg for egg wash

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Blend cottage cheese in a food processor until smooth.
  • In a bowl, mix flour, baking powder, cinnamon, and salt.
  • Fold in the blended cottage cheese and maple syrup/honey (if using).
  • Gently fold in the blueberries without overmixing.
  • Divide into four pieces, shape into bagels, and press the ends together.
  • Brush with egg wash and bake for 20-25 minutes or until golden brown.
