Preheat the oven to 350°F and line a baking sheet with parchment paper
In a medium mixing bowl, whisk together the tahini, coconut sugar, egg, and vanilla extract until smooth and creamy
Add the flour, baking soda, and sea salt to the wet ingredients and mix until fully combined into a soft dough
Fold in the chocolate chips
Using a 3 tbsp cookie scoop, scoop dough and place on the prepared baking sheet and slightly flatten with your fingers
Bake for 8-10 minutes, or until the edges are just golden and the centers look slightly underdone (they’ll set as they cool)
Once they are out of the oven, shape them with a large biscuit cutter
Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
