Ingredients

  • 1/2 cup tahini or almond butter
  • 1/2 cup coconut sugar
  • 1 large egg
  • 1 tsp vanilla bean paste
  • 1/2 tsp baking soda
  • 1/4 tsp sea salt
  • 1/3 cup Bob's Red Mill 1:1 gluten free flour or all purpose flour
  • 1/2 cup dark chocolate chips

Instructions

  • Preheat the oven to 350°F and line a baking sheet with parchment paper
  • In a medium mixing bowl, whisk together the tahini, coconut sugar, egg, and vanilla extract until smooth and creamy
  • Add the flour, baking soda, and sea salt to the wet ingredients and mix until fully combined into a soft dough
  • Fold in the chocolate chips
  • Using a 3 tbsp cookie scoop, scoop dough and place on the prepared baking sheet and slightly flatten with your fingers
  • Bake for 8-10 minutes, or until the edges are just golden and the centers look slightly underdone (they’ll set as they cool)
  • Once they are out of the oven, shape them with a large biscuit cutter
  • Let the cookies cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely
