Preheat your oven to 350F and line a baking sheet with parchment paper
In a large mixing bowl, add your oil and coconut sugar and mix until a thick, clumpy texture forms
Add in your eggs, baking soda and powder, and vanilla extract and stir until well combined
Once combined, add in your flour and fold together until a few streaks of flour remain
Add in the chocolate chips and fold into the dough
Cover the bowl with a towel and place in the fridge for at least an hour
Using a 3 tbsp cookie scoop, scoop the cookie dough out into balls and place them on your cookie sheet (should make roughly 6-8 large cookies)
Bake for 9-10 minutes
At the 7 minute mark, add more chocolate chips to the tops of each cookie
Remove from the oven and beat the pan on the counter 4-5 times to flatten out the cookie. While still hot, using a biscuit cutter, round out your cookies as well
Allow to cool for 10 minutes
Top with flakey sea salt
