Ingredients

  • 2 lbs chicken breast boneless and skinless
  • 3 cups chicken bone broth
  • 1 packet ranch seasoning
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tsp cayenne
  • 3/4 tsp paprika
  • 1 tsp chili powder
  • 14.5 oz can corn
  • 15 oz can fire roasted tomatoes diced
  • 15 oz can dark red kidney beans
  • 15 oz can black beans
  • 4 oz can green chiles diced
  • 10 slices cooked bacon chopped
  • 8 oz cream cheese
  • 1 1/2 cups Mexican style cheese
  • optional: avocado, sour cream, or additional cheese

Instructions

Enable step-by-step mode
  • In a slow cooker, combine all ingredients except cheese and cook on high for 4-5 hours or low for 6-8 hours
  • When there is 30 minutes left, take chicken out and shred; place back in to crock pot to finish cooking
  • Add in your shredded cheese and mix until melted
  • Plate and top with sour cream, additional cheese, avocado, or any other toppings
