Ingredients

  • 2 cups rolled oats
  • 1 cup cookie butter or peanut butter
  • 1/3 cup maple syrup
  • 1/2 cup vanilla protein powder
  • 2 tbsp ground flaxseed
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp fine sea salt
  • 1/4 cup white chocolate chips
  • 1/4 cup UNREAL peanut gems or mini M&Ms

Instructions

  • Add oats, cookie butter, maple syrup, protein powder, flaxseed, vanilla, cinnamon, and salt to a large bowl. Stir until fully combined. Dough should hold together when pressed between two fingers. If too dry, add maple syrup one teaspoon at a time. If too wet, add oats one tablespoon at a time.
  • Fold in white chocolate chips and UNREAL peanut butter gems gently until evenly distributed.
  • Use a tablespoon or small cookie scoop to portion the dough. Roll into smooth balls between your palms.
  • Place on a parchment-lined tray and freeze for 20 minutes until firm.
  • Transfer to a freezer-safe bag or airtight container and store in the freezer for up to 2 to 3 months. Eat straight from frozen or let sit at room temperature for 2 minutes before eating.
