Ingredients

  • 1 lb carrots about 8, peeled or scrubbed
  • 3 tablespoons olive oil
  • 2 tablespoons maple syrup or honey
  • 1 teaspoon paprika
  • 1/2 teaspoon cumin
  • Salt and pepper to taste

For the whipped feta

  • 8 oz feta cheese crumbled
  • 1 cup Greek yogurt 8% preferred
  • 3 tablespoons olive oil
  • 2 cloves garlic
  • 2 1/2 tablespoons lemon juice

For serving

  • Chopped parsley
  • Pomegranate seeds optional

Instructions

Enable step-by-step mode
  • Preheat oven to 400°F. Toss carrots with oil, maple syrup, paprika, and cumin.
  • Roast 15 minutes, drizzle with reserved marinade, then roast 10–15 minutes more.
