Preheat your oven to 350°F (175°C) and lightly grease a loaf pan
If you prefer a smoother texture, blend the cottage cheese until creamy (optional step)
In a large bowl, whisk together mashed bananas, cottage cheese, eggs, maple syrup, almond milk, and vanilla until smooth
In another bowl, mix whole wheat pastry flour, almond flour, baking powder, baking soda, cinnamon, and salt
Gradually fold the dry ingredients into the wet ingredients until just combined
If using chocolate chips or walnuts, gently fold them in now
Pour the batter into the prepared loaf pan
Bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean
Allow to cool for 10 minutes in the pan before transferring to a cooling rack
While the bread bakes, blend the pitted dates, hot water, almond milk, vanilla, and sea salt in a blender or food processor until smooth; add more almond milk if needed for a drizzle-able consistency
Once the bread has cooled, drizzle the salted caramel on top
Sprinkle a pinch of flaky sea salt for extra flavor if desired
