Ingredients

Wet Ingredients:

  • 3 medium ripe bananas mashed
  • 2 large eggs
  • 1/3 cup coconut oil melted and slightly cooled
  • 1/4 cup maple syrup or honey
  • 1/4 cup coconut sugar
  • 1 tsp vanilla bean paste
  • 1 cup cottage cheese or Greek Yogurt

Dry Ingredients:

  • 2 cups 1:1 gluten free flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp salt

Mix-Ins:

  • 1/4 cup white chocolate chips optional
  • 2 tbsp holiday sprinkles

Toppings:

  • 1/4 cups white chocolate chips melted
  • 1 tbsp holiday sprinkles

Instructions

  • Preheat oven to 350°F (175°C) and grease or line a loaf pan with parchment paper
  • In a large mixing bowl, mash the bananas and whisk in the eggs, melted butter, maple syrup, sugar, cottage cheese and vanilla until smooth
  • In a separate bowl, whisk together the flour, baking soda, baking powder, and salt
  • Gradually fold the dry ingredients into the wet ingredients
  • Add the white chocolate chips and sprinkles, if using, and mix until just combined
  • Pour the batter into the prepared loaf pan
  • Sprinkle the additional sprinkles evenly over the top
  • Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean
  • Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely
  • Drizzle in melted white chocolate on top and cut into slices
  • Plate and enjoy!!!
