One Pot Creamy Cajun Chicken Pasta
Ingredients
- 1 lb chicken breast cut into bite-sized pieces
- 2 tbsp cajun seasoning
- 12 oz pasta penne, rotini, or your favorite shape
- 2 ½ cups chicken broth
- 1 cup half-and-half or milk
- ½ cup Greek yogurt or cottage cheese, blended until smooth
- 14 oz diced tomatoes drained
- 1 red bell pepper sliced
- 1 small onion sliced
- 3 cloves garlic minced
- 1 tbsp olive oil
- ½ cup parmesan cheese shredded
- salt and pepper to taste
- green onions chopped, for garnish
Instructions
- Heat olive oil in a large pot over medium-high heat, add the chicken, sprinkle with Cajun seasoning, and cook until browned, about 5 minutes
- Remove chicken and set aside
- In the same pot, add the onion, bell pepper, and garlic
- Sauté for 2-3 minutes until softened
- Add the pasta, chicken broth, and half-and-half
- Stir and bring to a simmer, cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender
- Stir in the diced tomatoes, cooked chicken, Greek yogurt (or cottage cheese), and Parmesan cheese, and mix until creamy
- Season with salt and pepper to taste and garnish with fresh parsley or green onions!
