Ingredients
- 1 lb chicken breast cut into bite-sized pieces
- 2 tbsp cajun seasoning
- 12 oz pasta penne, rotini, or your favorite shape
- 2 ½ cups chicken broth
- 1 cup half-and-half or milk
- ½ cup Greek yogurt or cottage cheese, blended until smooth
- 14 oz diced tomatoes drained
- 1 red bell pepper sliced
- 1 small onion sliced
- 3 cloves garlic minced
- 1 tbsp olive oil
- ½ cup parmesan cheese shredded
- salt and pepper to taste
- green onions chopped, for garnish
Instructions
