This dish brings together the familiar, savory flavors of a cheeseburger with the satisfying crunch of roasted potatoes. The result is a comforting, hearty meal that feels both genuine and delightfully unexpected—perfect for a busy weeknight dinner or a relaxed meal with family.

Uniform Potatoes: Cut your potatoes into even pieces to ensure they cook uniformly and crisp up perfectly. Whether you brown them in a Dutch oven over medium heat with olive oil or roast them on a baking sheet at 400°F (flipping halfway through), consistent sizing is essential.

Deglazing for Depth: After browning the potatoes and before adding your aromatics, if you notice any browned bits stuck to the bottom of your Dutch oven, deglaze with a splash of beef bone broth. This step will help lift those flavorful bits and integrate them into your dish.

Batch Cooking the Meat: When browning the ground beef, avoid overcrowding the pan. Cooking in batches ensures you get a proper sear, which intensifies the cheeseburger flavor of the dish. Once the meat is well browned, proceed by adding your spices.

Maintaining a Saucy Consistency: After combining the browned potatoes with the meat and aromatics, pour in the beef bone broth and bring the mixture to a boil before reducing it to a simmer. Keep an eye on the liquid during the simmering process—if it reduces too much, add a bit more broth to maintain a rich, saucy consistency.

Cheese Integration: When it’s time to add the cheeses, lower the heat to ensure a gentle melt. Stir carefully until the cheese is smoothly incorporated into the dish; this prevents separation and creates a luscious, creamy finish.

Refrigerate: After the dish has cooled, transfer it to an airtight container and store in the refrigerator for up to 5 days

Reheat: Warm up portions in the microwave or oven for a few minutes until heated through

Freeze: For longer storage, divide into freezer-safe containers. The dish can be frozen for up to 3 months; reheat in the oven from frozen at a low temperature to retain texture.

Ingredients

  • 2 tbsp olive oil
  • 3 lbs russet potatoes peeled and sliced
  • 2 lbs ground beef grass-fed preferred
  • 1 large yellow onion diced
  • 2 bell peppers diced
  • 2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp chili powder
  • 3/4 tsp salt
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • 3 tbsp tomato paste
  • 3 cups beef bone broth
  • 1 cup mozzarella shredded
  • 1 1/3 cup cheddar cheese shredded
  • 1 tbsp parsley for topping

Instructions

Enable step-by-step mode
  • In a large Dutch oven over medium heat, drizzle your olive oil and cook your potatoes until golden brown on all sides (you can also place on a baking sheet and cook for 20 minutes on 400F, ensuring to flip over half way through)
  • Remove potatoes and add in your garlic, onions and bell peppers
  • Cook until garlic is fragrant and onions are translucent and stir in tomato paste
  • Add ground beef along with all spices
  • Once beef is cooked through, add back in potatoes and stir to incorporate
  • Pour in beef bone broth and allow it to come to a boil by increasing heat to high
  • Turn to simmer and cover with the lid; allow to cook for 50-60 minutes or until the potatoes are tender
  • Add in cheeses and stir to melt the cheese in with the meat and potatoes
  • Plate and top with your chopped parsley
