  • All-Purpose Flour: Regular all-purpose flour gives the bread structure. You can use a 1:1 gluten-free all-purpose flour or almond flour blend if needed, but you may need to adjust the amount slightly depending on the blend and the moisture in your cottage cheese.
  • Baking Powder: This gives the bread lift without the need for yeast or proofing.
  • Butter: Softened butter forms the base of the rich garlic topping.
  • Garlic: I use six fresh garlic cloves because I LOVE a bold garlic flavor! Feel free to adjust the amount to suit your preferences. Make sure to follow instructions and use fresh garlic as garlic powder will give a different taste.
  • Red Pepper Flakes: These add just a little heat to balance the richness of the butter and cheese. You can reduce or omit them if you don’t like spice.
  • Mozzarella: Mozzarella cheese melts beautifully and gives us that classic cheesy pull.

How to Make Cottage Cheese Garlic Bread

One of my favorite things about this recipe is that you don’t have to wait for dough to rise. Just mix, roll, top, and bake!

Step 1: Prepare the dough. Combine the cottage cheese, flour, baking powder, and salt in a large mixing bowl. Knead until everything is well incorporated. If the dough feels too sticky to work with, add flour one tablespoon at a time until it is JUST no longer sticky and a soft dough forms.

Step 2: Roll it out. Transfer the dough to a lightly floured surface and roll it out evenly. Then, carefully transfer it to a baking sheet lined with parchment paper.

Step 3: Make the garlic butter. Combine and stir the softened butter, minced garlic, salt, black pepper, and red pepper flakes. Spread the mixture evenly over the uncooked dough.

Step 4: Make it cheesy. Sprinkle the shredded mozzarella and sharp cheddar evenly over the top.

Step 5: Bake. Transfer the bread to the oven, and bake just until the cheese is bubbly and melted and the edges of the bread are golden brown. 

Step 6: Finish and serve. If you notice any excess liquid around the bread, gently blot it with a paper towel. Garnish with parsley and extra red pepper flakes if desired, then slice and dig in!
