Cottage Cheese Garlic Bread

This cottage cheese garlic bread is a cozy, flavorful twist on classic garlic bread. Made with a simple cottage cheese dough and topped with garlic butter, mozzarella, and cheddar, it’s soft, cheesy, naturally higher in protein, and perfect as a side or snack.

Ingredients

  • 1 cup cottage cheese
  • 1 cup all purpose flour or 1:1 gluten free flour
  • 1/2 tsp baking powder
  • 1/2 tsp salt

Garlic Topping

  • 5 tbsp butter softened
  • 6 cloves garlic minced (adjust to your liking)
  • 1 tsp salt
  • 3/4 tsp black pepper
  • 1 tsp red pepper flakes
  • 1 cup mozzarella shredded
  • 1/2 cup sharp cheddar shredded
  • 1 tbsp parsley for garnish

Instructions

Enable step-by-step mode
  • Preheat oven to 375F and line a baking sheet with parchment paper
  • In a large mixing bowl, combine ingredients for the dough and mix well until it’s well incorporated (I used my hands to knead the dough well- if the dough is too sticky, add 1 tbsp of flour at a time until it’s JUST not sticky anymore)
  • Roll out your dough on a lightly floured surface and place on baking sheet
  • Prepare the garlic butter by combining butter, garlic, salt, pepper, and red pepper flakes and mix until well incorporated; spread it on top of the uncooked dough
  • Top with cheddar and mozzarella cheeses
  • Bake for 20 minutes or until the cheese is bubbly and melted and the edges are golden brown
  • There will be liquid around the bread when you pull it from the oven so just soak it up with a paper towel
