Ingredients

  • 2 tbsp olive oil
  • 3 lbs russet potatoes peeled and sliced
  • 2 lbs ground beef grass-fed preferred
  • 1 large yellow onion diced
  • 2 bell peppers diced
  • 2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp chili powder
  • 3/4 tsp salt
  • 1/2 tsp cumin
  • 1 tsp garlic powder
  • 3 tbsp tomato paste
  • 3 cups beef bone broth
  • 1 cup mozzarella shredded
  • 1 1/3 cup cheddar cheese shredded
  • 1 tbsp parsley for topping

Instructions

  • In a large Dutch oven over medium heat, drizzle your olive oil and cook your potatoes until golden brown on all sides (you can also place on a baking sheet and cook for 20 minutes on 400F, ensuring to flip over half way through)
  • Remove potatoes and add in your garlic, onions and bell peppers
  • Cook until garlic is fragrant and onions are translucent and stir in tomato paste
  • Add ground beef along with all spices
  • Once beef is cooked through, add back in potatoes and stir to incorporate
  • Pour in beef bone broth and allow it to come to a boil by increasing heat to high
  • Turn to simmer and cover with the lid; allow to cook for 50-60 minutes or until the potatoes are tender
  • Add in cheeses and stir to melt the cheese in with the meat and potatoes
  • Plate and top with your chopped parsley
