Apple Butter Apple Fritter Focaccia

This apple fritter focaccia recipe is essentially an apple fritter without the deep-frying. Think soft, pillowy bread swirled with apple butter and topped with diced apples and cinnamon sugar. It’s so easy to make and fills your kitchen with the scent of fall! If you’re looking for more cozy apple recipes, my apple banana bread is another one of my favorites.

This cinnamon apple focaccia was inspired by my mom and grandma, both of whom loved apple fritters. I think of this as a modern twist on the classic treat, and I know they would have devoured it. It’s one of those recipes that’s as cozy to bake as it is to eat!

Why You’ll Love This Apple Fritter Focaccia

  • The Best Fall Flavor: Every bite is sweet, spiced, and completely addicting. If you’re as obsessed with fall baking as I am, try my cinnamon swirl crunch banana bread next.
  • Foolproof: Focaccia doesn’t need to be perfect or fussy. Just layer the ingredients, and let the proofing and oven do the heavy lifting. The rustic look makes it more beautiful!
  • Minimal Ingredients: Nine easy-to-find baking staples are all you need to make a focaccia worthy of a bakery.
  • Great for Sharing: I’ll bake a pan on the weekend, cut it into squares, and suddenly I’ll have snacks, desserts, and even sweet breakfast bites prepped for days.

Ingredients You’ll Need

Below are a few of my notes about the key ingredients. Scroll down to the recipe card for the complete details!

  • Flour: All-purpose flour forms the base of the focaccia dough. If you need to keep your focaccia gluten-free, use a 1:1 all-purpose gluten-free flour blend, and make sure to add 1 teaspoon of xanthan gum if your flour blend doesn’t include it. Otherwise, the dough will bake up tough and flat!
  • Instant Yeast: This gives the focaccia its rise and creates the soft, pillowy texture we want. I use instant yeast because it can be mixed right into the dry ingredients without activating it separately first.
  • Warm Water: Use warm water around 100-110°F (38-43°C) to help activate the yeast. Avoid hot water, which can kill the yeast and prevent the dough from rising.
  • Salt and Sugar: Salt adds flavor to the dough, while sugar adds a subtle sweetness and helps create the apple fritter-inspired flavor.
  • Olive Oil: A must for focaccia! Olive oil adds richness and helps create a soft interior and lightly crisp, golden exterior.
  • Apple Butter: Swirled over the dough before baking, apple butter adds concentrated apple flavor, sweetness, and warm fall spices to every bite. Use your favorite store-bought or homemade apple butter.
  • Apples: I recommend using a firm baking apple that will hold its shape in the oven, such as Honeycrisp or Granny Smith. Dice the apple fairly small so you get a little in every bite without weighing down the dough.
  • Cinnamon Sugar: A simple combination of cinnamon and sugar sprinkled over the apples gives the focaccia that sweet, cinnamon-coated apple fritter flavor as it bakes.

Ingredient Swaps

  • No apple butter? Swap in pumpkin butter, pear butter, or even a spiced applesauce. It won’t have quite the same richness but will still give you that cozy fall flavor.
  • Want more sweetness? Add a few tablespoons of brown sugar to the dough or drizzle caramel sauce over the baked focaccia. Or, add a sprinkle of mini chocolate chips on top.
  • No fresh apples on hand? Use dried apples chopped into small pieces, or even raisins or dried cranberries for a different texture.
  • Boost the flavor? Add a teaspoon of apple pie spice or extra cinnamon directly into the dough for more fall spice notes.

How to Make Apple Fritter Focaccia

I love to spend an afternoon making this one with the kids. They love getting to dimple the top! Here’s a look at the process:

  1. Prepare the dough. Mix the flour, yeast, salt, and sugar in a bowl. Once combined, stir in the water and olive oil.
  2. Proof. Cover the dough, and let it rest in a warm place until it doubles in size.
  3. Layer. Spread the dough in an even layer in a greased pan. Then, use your fingers to press dimples into the top. Swirl apple butter over the dough, and scatter diced apples and the cinnamon sugar mixture on top.
  4. Bake. Let the dough rest. Then, bake until it’s golden brown on top.
  5. Serve. Cool the focaccia slightly, and enjoy!

Tip: When serving littles, I like to cut my focaccia into sticks instead of squares for little hands.

How to Store Apple Fritter Focaccia

Store leftover apple fritter focaccia in an airtight container at room temperature for up to 2 days or in the refrigerator for up to 5 days. I recommend warming individual pieces briefly in the microwave or oven before serving to bring back the soft, pillowy texture.

You can also freeze individual pieces for up to 3 months. Let the focaccia cool completely, wrap the pieces individually, and transfer them to a freezer-safe bag or container. Thaw overnight in the refrigerator or at room temperature before reheating.

Frequently Asked Questions

Why didn’t my focaccia dough rise?

The most common causes are expired yeast, water that was too hot, or a room that was too cold. Make sure your yeast is fresh and use water around 100-110°F (38-43°C). If your kitchen is cool, the dough may simply need more time to proof. Go by the size of the dough rather than the clock, and wait until it has roughly doubled in size.

Why did my focaccia turn out dense?

Dense focaccia is usually a sign that the dough didn’t proof long enough or that too much flour was added. Let the dough rise until it has doubled in size before moving on to the next step. Also, measure the flour carefully to avoid creating a dry, heavy dough.

What are the best apples for apple fritter focaccia?

I prefer Honeycrisp or Granny Smith apples because they hold their shape well when baked. Honeycrisp apples create a sweeter flavor, while Granny Smith apples add a tart contrast to the apple butter and cinnamon sugar.
