Banana Cottage Cheese French Toast Bake
This recipe was born on one of those mornings where I wanted something warm, comforting, and a little sweet—but also filling enough to keep me going. It’s the perfect mix of soft banana bread vibes and classic French toast, but with a boost of protein thanks to the cottage cheese and eggs.
Everything gets stirred together in one bowl, poured into a dish, and baked until golden and set. You can add chocolate chips or chopped pecans on top, but even without the extras, it’s so satisfying. This has quickly become one of my favorite breakfast meal prep staples, and my kids love it too.

Recipe Tips
Use ripe bananas: The riper, the better. They bring so much natural sweetness and help the bake hold together.
Cube your bread the night before: Slightly stale bread works best here—it soaks up the custard and bakes up soft in the middle with a lightly crisp top.
Don’t overbake: Check at the 25-minute mark. You want the center to be set, but still soft—not dry.
Top after baking for crunch: If you like crunchier nuts or melty chocolate, you can add them during the last 5 minutes or right after baking.
Ingredient Swaps: No cottage cheese ? Sub with Greek yogurt or ricotta if that’s what you have. Dairy-free ? Use plant-based milk and swap cottage cheese for a dairy-free yogurt. More spice ? Add a pinch of nutmeg or pumpkin spice for extra warmth. Gluten-free ? Use gluten-free bread and make sure all other ingredients are certified gluten-free. Need more sweetness ? Drizzle with maple syrup or sprinkle coconut sugar on top before baking.
Fridge: Store in an airtight container for up to 4 days.
Freezer: Freeze individual slices or the whole bake for up to 2 months.
Reheat: Microwave or bake at 300°F until warmed through. Add a splash of milk if reheating from frozen to keep it moist.

Ingredients
- 4 slices of bread cut into cubes
- 2 overripe bananas mashed
- ½ cup cottage cheese
- 2 large eggs
- 1 cup fairlife milk or any milk
- 2 tbsp honey or maple syrup
- 1 tsp cinnamon
- ½ tsp vanilla extract
- ¼ cup chopped pecans or chocolate chips, optional
Instructions
- Preheat the oven to 350°F and grease a baking dish
- In a bowl, whisk together mashed bananas, cottage cheese, eggs, milk, honey, cinnamon, and vanilla
- Add the bread cubes to the mixture and stir until fully coated
- Pour everything into the greased baking dish
- Sprinkle with pecans or chocolate chips if desired
- Bake for 25-30 minutes until golden and set
- Serve warm with syrup or fresh fruit
