Banana Cottage Cheese French Toast Bake

This recipe was born on one of those mornings where I wanted something warm, comforting, and a little sweet—but also filling enough to keep me going. It’s the perfect mix of soft banana bread vibes and classic French toast, but with a boost of protein thanks to the cottage cheese and eggs. The flavors remind me of a banana cottage cheese French toast bake, with all those elements coming together in one dish.

Everything gets stirred together in one bowl, poured into a dish, and baked until golden and set. You can add chocolate chips or chopped pecans on top, but even without the extras, it’s so satisfying. This has quickly become one of my favorite breakfast meal prep staples, and my kids love it too.

Recipe Tips

Use ripe bananas: The riper, the better. They bring so much natural sweetness and help the bake hold together, which is perfect when making a breakfast bake inspired by banana cottage cheese French toast.

Cube your bread the night before: Slightly stale bread works best here—it soaks up the custard and bakes up soft in the middle with a lightly crisp top, making the toast extra delicious.

Don’t overbake: Check at the 25-minute mark. You want the center to be set, but still soft—not dry. That lovely soft texture is a key part of a banana-filled cottage cheese French toast bake.

Top after baking for crunch: If you like crunchier nuts or melty chocolate, you can add them during the last 5 minutes or right after baking. These toppings are a tasty addition to any banana cottage cheese French toast bake.

Ingredient SwapsNo cottage cheese? Sub with Greek yogurt or ricotta if that’s what you have. Dairy-free? Use plant-based milk and swap cottage cheese for a dairy-free yogurt. More spice? Add a pinch of nutmeg or pumpkin spice for extra warmth. Gluten-free? Use gluten-free bread and make sure all other ingredients are certified gluten-free. Need more sweetness? Drizzle with maple syrup or sprinkle coconut sugar on top before baking. You could use these swaps for your own take on a French toast bake with banana and cottage cheese.

Fridge: Store in an airtight container for up to 4 days. This works beautifully for prepping a French toast ahead.

Freezer: Freeze individual slices or the whole bake for up to 2 months. This method keeps your banana toast fresh for longer.

Reheat: Microwave or bake at 300°F until warmed through. Add a splash of milk if reheating from frozen to keep it moist. That way, your French toast bake with banana and cottage cheese stays delicious.
