Muddy Buddy Rice Krispies

Somewhere between a Rice Krispie treat and a bag of muddy buddies lives this dessert—crispy, chewy, chocolatey, and dusted in powdered sugar like it’s straight from a childhood sleepover snack table. I made these in under 10 minutes using what I already had in the pantry, and they’ve officially earned permanent meal prep snack status. No stovetop, no fuss, just melt, mix, chill, and snack straight from the fridge.

Recipe Tips

Use a silicone spatula greased with oil or butter to press the mixture into the pan—it won’t stick.

If the mixture feels too thick after adding cereal, pop it back in the microwave for 10 seconds to soften.

Want to turn them into bars instead of squares? Just slice into rectangles and stack for meal prep snacking.

For extra crunch, mix in ¼ cup chopped peanuts or crushed pretzels with the cereal.

Almond butter or sunflower seed butter will work too, just note it might slightly change the flavor (still delicious though). Want extra sweetness? ? Stir in a handful of mini chocolate chips after everything has cooled a bit, or add a sprinkle of coconut sugar before the powdered sugar dusting.

Storage: Once cooled and cut, store your Muddy Buddy Rice Krispie Treats in an airtight container. Keep them in the fridge for up to 1 week—honestly, I think they taste even better cold. If you’re prepping ahead or making a double batch, you can also freeze them for up to 4 months. Just layer parchment between the squares so they don’t stick, and let them sit at room temp for a few minutes before eating (or don’t—frozen is lowkey amazing).

Ingredients

  • 2 cups marshmallows @dandies
  • 3 cups brown rice cereal or regular Rice Krispies @onedegreeorganics
  • 1/2 cup powdered sugar

Instructions

  • In a large microwave-safe bowl, combine the chocolate and peanut butter. Microwave in 30-second intervals for a total of 1 minute, stirring between, until smooth.
  • Stir in the marshmallows and microwave again for 1 minute. Mix until fully melted and combined.
  • Pour in the cereal and gently stir to coat everything evenly.
  • Transfer to a parchment-lined 9×9 pan and press down to form an even layer.
  • Let the bars cool and set (I pop mine in the fridge for 30 minutes).
  • Slice into squares, then toss each one in powdered sugar until coated (tap off the excess).
  • Store in the fridge or freezer… if you don’t eat the whole pan immediately.
