Ingredients

  • 1 lb chicken breast cut into bite-sized pieces
  • 2 tbsp cajun seasoning
  • 12 oz pasta penne, rotini, or your favorite shape
  • 2 ½ cups chicken broth
  • 1 cup half-and-half or milk
  • ½ cup Greek yogurt or cottage cheese, blended until smooth
  • 14 oz diced tomatoes drained
  • 1 red bell pepper sliced
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 1 tbsp olive oil
  • ½ cup parmesan cheese shredded
  • salt and pepper to taste
  • green onions chopped, for garnish

Instructions

  • Heat olive oil in a large pot over medium-high heat, add the chicken, sprinkle with Cajun seasoning, and cook until browned, about 5 minutes
  • Remove chicken and set aside
  • In the same pot, add the onion, bell pepper, and garlic
  • Sauté for 2-3 minutes until softened
  • Add the pasta, chicken broth, and half-and-half
  • Stir and bring to a simmer, cover and cook for 10-12 minutes, stirring occasionally, until the pasta is tender
  • Stir in the diced tomatoes, cooked chicken, Greek yogurt (or cottage cheese), and Parmesan cheese, and mix until creamy
  • Season with salt and pepper to taste and garnish with fresh parsley or green onions!
