Recipe Tips

Blend the Cottage Cheese for the Smoothest Texture: Cottage cheese naturally has some curds, so blending it with the protein powder first creates a smooth, creamy batter that mimics a classic brownie texture.

Adjust Cooking Time Based on Your Preference: If you love a gooey brownie, microwave for about 2 minutes or bake for 15 minutes at 350°F. For a more cake-like texture, let it cook a little longer.

Watch the Brownie in the Microwave: Since microwaves vary in power, keep an eye on your brownie while cooking to prevent overflow. If needed, cook in 30-second intervals after the first minute.

Use High-Quality Cocoa or Cacao Powder: The richness of your brownie depends on the chocolate you use! Cacao powder gives a deep, natural chocolate flavor, while Dutch-processed cocoa will make it extra smooth.

Ingredient Swaps: Cottage Cheese ? Swap for blended Greek yogurt for a similar creamy texture. Oat Flour ? Use almond flour for a lower-carb option or all-purpose flour if not gluten-free. Maple Syrup ? Swap for honey or a sugar-free syrup alternative. Milk ? Use any plant-based milk or regular dairy milk. Chocolate Protein Powder ? Try vanilla protein for a lighter flavor or skip it for a more traditional brownie taste.

Best Served Fresh: This brownie is meant to be eaten right away, but if you have leftovers, store them in an airtight container at room temperature for up to 1 day or in the fridge for 2 days.

Reheating: Microwave for 10-15 seconds to bring back the gooey texture.
